QĪN, located along Cross Street, one of Singapore's proudest preservations
known for its history and heritage. Each dish on the menu here celebrates the
culinary culture of the past with an exemplary twist, serving reimagined
Chinese classics like the Siphon Mushroom Tea, Chilli Crab Crostini and ‘Sang
Mein’. Nostalgic snapshots here go beyond the plate – the restaurant interior
also presents a rustic rendition of Asian décor, rightfully elevated with a
generous view of the city.
Executive Chef: James Tay - Singapore
Executive Chef of QĪN Restaurant & Bar, spent over 20 years honing his
culinary skills. With a penchant for traveling coupled with the love for
cuisine, these laid the foundation and inspiration behind his creations.
Having started his career at a young age, he had the opportunity to be exposed
to traditional delicacies. With a desire to keep traditions for generations to
come, he relentlessly upgrades his skill set to embrace modernity. His
philosophy of retaining the originality of classics while injecting a new lease
of life with modern cooking techniques has impressed many.

A pet-nat with irreverence & boldness! This is Quinta do Javali most recent project that has been getting tremendous reviews. An easy drinking Pet-Nat which is fully biodynamic.
The fermentation process is naturally conducted giving the last word to Mother Nature. With the necessary “breathing” time of any bold aromas of a natural wine emerge slightly macerated red fruits and mineral notes. In the mouth, it is possible to detect fruity notes and an acidic nerve that “freshly” refreshes the level of the natural sugars that the wine has, these sugars that are decreasing throughout the natural fermentation taking place inside the bottle.
2. Tapada do Chaves 2018 (vivino 4.1) $69.50 online
Tapada do Chaves is a historic producer of very small quantities, destined to an elite of consumers of rare fine wines. Made from Arinto, Antao Vaz & Fernao Pires. It is aged for 9 months on fine lees and batonnage. Straw-coloured, citric, complex and intense aroma, with hints of tropical fruit and nuts. Full-bodied and exuberant on the palate, the complex flavour and extremely elegant ripe fruit taste comes to the fore, with vibrant and fresh acidity. Harmonious, intensely fruity and persistent finish.
7. Regueiro Barricas 2020 (vivino 4.5) *Premium Package Wine $89.00 online
From a small Family Project in 1988 to being voted the best winery in Portugal in 2019. With a lineup of award winning wines from the Vinho Verde Region this is a boutique winery carrying a lot of knowledge, passion and prestige. Made purely from Alvarinho and aged for 8 months with Batonage in French Oak Barrels. Citrus coloured wine with a great complex aroma with notes of lemon zest, peach, pineapple and passion fruit with hints of salinity and well integrated oak. Dry, creamy and with a juicy fresh finish.
3. Clos Fonte do Santo Cherry Cap 2018 (4.1 vivino) $71.00 online
Made from Old Vines (65+ years), high on the mountainside to produce a rare light bodied Douro. Aged for 12 months in used French Oak. Light ruby color, such as the color of the red cherry aromas of red fruits dominate with a balanced maturation, without being exaggerated. Evidence for the notes of red cherry, gooseberry and raspberry. In the mouth, it is admirable the acid freshness in a red wine of the Douro, which positively reflects the influence of the location of these vines on a cooler terrain. The fruity notes, which are allied to the vibrant minerality, provide a proof marked by lightness
4. Quinta do Javali Old Vines 2014 (vivino 4.4) $89.00 Online
Made from old vines with 65+yrs. Aged for 20 months in French Oak. A rich dark red colored wine. The nose characterized by notes of ripe black fruit, with hints of stone of black plums, dark chocolate and cocoa nibs, bark, tobacco and some leather, throughout evolution. In the mouth, the structure is striking, with tannins well presented, elegant and harmonious, to contribute to a silky body.

Bacalhoa is the name of the palace where the vines for this wine is grown. When we tried this wine, we immediately knew it was coming with us, it has been described as rivaling a more expensive left bank Bordeaux by our wine community in Singapore. Made from Cabernet Sauvignon, Merlot & Petit Verdot. Aged for 18 months in new French Oak and minimum 19 months in bottle prior to release. concentrated with strong notes of red berry fruits with nuances of coffee, mocha, vanilla and nuts in a full, complex, fresh, elegant and persistent structure.
6. Quinta do Javali 10yr Old Tawny Port (vivino 4.2) $89.00 online
When Antonio's father-in-law bought the vineyards, it was to make Port wine just the way he liked them. The fully biodynamic range of Port wines were some of the best we tried in Portugal, the kind of wines where one glass was never enough.
Made from Tinta Roriz, Touriga Franca, Touriga Nacional, Tinto Cão e Tinta Barroca. Aged for minimum of 10yrs in French Oak.
Very brown color, with shades of mahogany. Nose characterized by aromas of figs, pharmacy, with balsamic notes and already hints of a slight vinagrinho, from aging in the Douro Valley. We should also emphasize the notes of cigar box and varnished wood. Mouth very balanced, with silky texture, captivating and refreshing at the acidic component. They confirm the notes of figs and honey, combined with an elegant structure and persistent.
