Wine Adore presents you with the ultimate food and wine pairing dinner at The Fullerton Bay Hotel on the 19th of November 2021 starting at 6:30pm last reservations will be at 8:30pm.

When appropriately paired, wine and food have the ability to enhance each other’s flavors, making them more pronounced, and render the entire taste experience a more satisfying and enjoyable one.

The menu is a creation of Wine Adore founders and the curated wines is a selection picked out by Partner Kirk Martin which includes a parcel of our favourite wines that was recently replenished at the arrival of a new shipment!

The Wineries

Cartuxa Winery (Alentejo Region)

One of the finest wine producers in Portugal, Cartuxa gets its name from the nearby Cartuxa Monastery built for the Carthusian Order between 1587 and 1598 in the Evora region of Alentejo, Portugal. The Quinta (Country Estate) and land were acquired in 1869 by the great grandfather of the current owner, Eugenio de Almeida.

Quinta do Javali (The Douro Region)

Quinta do Javali is the first fully Biodynamic Winery in the Douro Region of Portugal. It sits on the left bank of the Douro River in the parish Nagozelo do Douro - S. Joao da Pesqueira. Antonio Mendes is the viticulturist, winemaker and owner of Quinta do Javali, alongside his father-in-law who loved port wine so much he bought the estate so he could make port just the way he likes it.

Quinta dos Aciprestes (The Douro Region)

Quinta dos Aciprestes is one of two ancient vineyards owned by Real Companhia Velha who owns a total of 5 vineyards in The Douro. Real Companhia Velha was founded by a Royal Charter from King D. Jose I of Portugal in 1756. They were the first winery in the world to demarcate a wine region "Douro Valley" in the 1750's to preserve quality and protect heritage of their wines. Quinta dos Aciprestes is located on the left bank of the Douro River, with its vineyards sloping gently down to the river with ideal sun exposure. The wines are the expression of the Estate’s terroir showing intense concentration, excellent aromatic character and a full-bodied style.

The White Wines

Cartuxa Colheita White 2019

ABV%: 13.0%

Grapes: Antao Vaz, Arinto

Aging: Fermented in Stainless Steel Tanks, maturation on lees for 9 months

Tasting Notes: A balanced white wine, nice minerality with notes of tropical fruit, dry herb and orange blossom. Very good acidity and complexity, long finish with vibrant freshness.

Quinta do Javali PGE White 2019

ABV%: 13.0%

Grapes: Viosinho, Arinto

Aging: 12 months with batonnage in a spherical concrete vat made from vineyard soil

Biodynamic: A fully biodynamic wine

Tasting Notes: PGE stands for Post Graduate Enology a name given by winemaker Antonio as this was effectively his 'Master’s Degree' project. Attractive first aromas on the nose of a fruity component dominated by citrus fruits, with a palette of aromas revealing itself with notes of aniseed, brioche, butter and notes of toasted barrel. Beautiful and elegant finish. Only 700 bottles produced of this very limited-edition 2019 boutique

wine.

The Red Wines

Quinta dos Aciprestes Reserva Red 2018

ABV%: 14.5%

Grapes: Touriga Nacional, Touriga Franca

Aging: 12 Months in French Oak Barrels (30% new Oak, 70% old Oak)

Tasting Notes: This wine reveals an astonishing violet colour, with very complex aromas of plums, red and black fruit integrated with nuances of vanilla and floral notes. On the palate, bold red and black berry flavours, with round tannins and a long pleasant finish.

Cartuxa Reserva Red 2016

ABV%: 14.5%

Grapes: Syrah, Touriga Nacional, Alicante Bouschet, Aragonez

Aging: 15 months in new French Oak Barrels, followed by 15 months in bottle

Tasting Notes: A dark garnet coloured wine with aromas of balsamic, cherry, plum with underlying notes of nutmeg. Very complex with great structure, firm tannins and excellent acidity, with a long and elegant finish.

Quinta do Javali 10 Year Old Port Wine

ABV%: 19.5%

Grapes: Tinta Roriz, Touriga Franca, Touriga Nacional, Tinto Cao, Tinta Barroca

Aging: Minimum 10 years in French Oak Barrels

Biodynamic: A fully biodynamic port wine

Tasting Notes: Very brown color, with shades of mahogany. Nose characterized by aromas of figs with notes of balsamic, honey and cigar. Mouth very balanced, with silky texture, captivating and refreshing with an acidic component. Elegant structure and persistent finish.
